Home Made Cherry Cheese Cake

This cherry cheesecake requires no cooking and contains a graham cracker base and a layer of cherry pie filling. Because it’s so tasty, it’s sure to make everyone in the family happy. It can be prepared in a flash and with little effort. After trying this cheesecake, my spouse will no longer eat baked cheesecake.

It’s perfectly OK if you don’t have the time to prepare a traditional baked cherry cheesecake. It is our pleasure to share with you the recipe for the absolutely tastiest no-bake cherry cheesecake that can be found anywhere on the internet.

Although it requires just a few simple ingredients, the taste is not compromised in any way by this fact. Simply putting the cheesecake in the refrigerator for a longer period of time will allow it to get the desired consistency. If, after the three hours that are recommended by this recipe, the filling for your cheesecake is not thick enough, try placing it in the refrigerator for a few more hours, or even overnight.

INGREDIENTS:

FOR THIS RECIPE YOU’LL NEED: THE GRAHAM CRACKER CRUST INGREDIENTS:

 1¼ Cups.Of graham cracker crumbs.

¼ Cup.Of unsalted butter – melted.

¼ Cup.Of white sugar.

FOR THE CHERRY FILLING; YOU’LL NEED

An 8-oz Pkg.Of cream cheese – softened.

1 Cup.Of powdered sugar.

1 Tsp.Of vanilla extract.

1 Cup.Of heavy whipping cream.

Canned cherry pie filling; a 12-oz can

DIRECTIONS:

Step 1 – In a bowl, thoroughly combine the graham cracker crumbs, margarine, and sugar for the crust until the mixture takes on a crumbly consistency. Fill a 9-inch pie pan halfway with the mixture, pushing it up the edges as much as possible.

Step 2 – In a bowl, use an electric mixer to beat cream cheese, powdered sugar, and vanilla extract for the filling until the mixture is smooth and can be spread.

Step 3 – Using an electric mixer and a bowl made of glass or metal that has been cooled, whip cream until it forms soft peaks.

Step 4 – Combine the whipped cream and cream cheese in a bowl until you have a smooth consistency. When the crust is ready, pour the filling into it.

Step 5 – After you have smoothed the top with a spatula, place it in the refrigerator for at least two hours, preferably three. And then cover the cheesecake that has been refrigerated with the cherry pie filling.

Step 6 – Serve immediately, or cover and place in the refrigerator until ready to serve.

7th Step – Spread parchment paper on the bottom of a baking sheet. After that, cut the sub rolls in half lengthwise and lay them open side up on the baking sheet.

8th Step – Spread the special sauce over the top side of the roll, and then ladle the ground beef mixture onto the bottom halves of all four rolls in a uniform distribution, and top with the roll tops.

9th Step – On top of the ground beef, evenly distribute the cheddar cheese, then set the baking sheet in the oven and continue baking for approximately 6 to 8 minutes, or until the cheese is melted.

Caramel Cake

Hot Caramel Cake...Ummmmm A Nice Tasty treat for early December..

INGREDIENTS:

CAKE INGREDIENTS:

2+1/2 C.OF sifted all-purpose flour,

I sifted it before using.

1/4 TSP.Of Sea salt.

2 C.OF regular sugar.

2 sticks unsalted butter.

1 C.OF water.

1 TSP.Of baking soda.

1/2 C.OF buttermilk.

2 large whole eggs.

1 TSP.Of vanilla extract.

FROSTING INGREDIENTS

3 C.OF granulated sugar.

 About 1/2 C.Of softened butter.

1 C.OF heavy cream.

A pinch.Of sea salt.

2 TSP.Of vanilla extract.

DIRECTIONS:
How To Make Homemade Caramel Cake

Step 1- Prepare two 9“ cake pans by greasing them with butter and sprinkle some flour.

Step 2- In a large mixing bowl, sift 2 cups+ 2 T.Of flour with sea salt. Stir in the sugar and mix till combined.

Step 3- In a medium saucepan, combine the butter with water. Bring it to a boil, after that add the flour and sugar over it. Whisk before they’re mixed.

Step 4- Add the baking soda, buttermilk, vanilla extract, and eggs then whisk until smooth and well incorporated.

Step 5- Spread the mixture into the baking pans.

Step 6- Bake for around 25 minutes, and after around 15 min, check your cake. When the tester comes out clean, the cake is finished, just be careful not to overcook.

Step 7- Remove the pans from the oven and allow thirty minutes to cool on the wire rack, then switch the layers onto the racks filled with parchment to cool fully.

HOW TO MAKE A MAGICAL HOMEMADE CARAMEL FROSTING:

Step 1- Place 2 cups and half of the granulated sugar, butter, cream, and a sprinkle of salt in a big saucepan.

Step 2-Cook until almost to a rolling boil on low, then pour in the sugar syrup you produce in another skillet.

Step 3- Meanwhile, add a half cup of sugar in a small skillet and melt on medium until it becomes an amber color. This sugar is not stirred, so every few minutes you will need to rotate the pan to help spread the sugar. This is the sugar syrup you are going to add to the casserole.

Step 4- Cook on medium to medium-high as you mix in the syrup, stirring continuously until almost softball level.

Step 5- Remove from the heat, stir in the vanilla extract, and cool for fifteen minutes or so.

Step 6- Either switch and beat on medium speed to the big stand mixer or use a hand mixer on medium and whip until frosting consistency becomes around 20 min. Note: You should add a little extra cream if frosting gets too fast or gets too thick.

Chocolate Eclairs

I think this photo speaks for itself...So let's get to the deliciousness...

INGREDIENTS:

4 tablespoons (57 grams) unsalted butter

1 teaspoon granulated sugar

½ cup (118 ml) water

½ cup (74 grams) all-purpose flour

Small pinch of salt

2 large eggs, room temperature, beaten

3/4 cup (177 ml) heavy whipping cream, cold

1/2 teaspoons powdered sugar

4 ounces (115 grams) 70 or 72% dark chocolate, broken into pieces

DIRECTIONS:

To a medium saucepan over medium heat add the butter, sugar and water. Stir until the butter and sugar are melted and bring to a boil. Remove from heat, while stirring vigorously with a wooden spoon or whisk, add the flour and salt. Continue stirring and cook until the mix starts to pull away from the sides of the pan and looks like mashed potato.

Remove from the heat. Add one egg and beat the mix until the egg is incorporated and smooth. Repeat with the other egg until the mix is a shiny, smooth paste. Allow to cool slightly in the pan. Preheat the oven to 400°F/200°C with the rack in the center of the oven. Line a large baking sheet with parchment paper.

Draw 10, 3-inch lines, 2 inches apart on the paper. Turn the paper over so the pastry is not directly on the ink. Spoon the cooled pastry mixture into a piping bag fitted with a 1/2-inch (13 mm) round nozzle. Pipe 3-inch (7 ½ cm) long pastry lengths onto the baking sheet following the lines, about 1-inch (2 ½ cm) thick.

Bake for 20 minutes, then turn the oven temperature down to 375°F/190°C and bake for a further 5-6 minutes until puffed and golden brown. Times will vary depending on your oven. Remove from the oven, transfer to a cooling rack to cool completely.

To a bowl, add the whipping cream (or use a stand mixer).

Beat the whipped cream until soft peaks start to form. Add the powdered sugar and continue to beat until stiff peaks form. Transfer the cream to a piping bag fitted with a small nozzle.

Once the pastries are cool, make 2 holes along the underside of the pastries. Pipe cream into each of the holes to fill the cavity of the pastry.

Do not overfill. You will feel it filling up in your hand.

Repeat with all. Alternately, you can slice the pastries lengthwise and sandwich the cream between the two. To a wide, microwave-safe glass bowl, add the chocolate.

Microwave in 15 second increments, stirring between until melted.

Dip the tops of the pastries into the melted chocolate, allowing excess to drip off and set them on a tray. Refrigerate to cool completely and set the chocolate.

Chicago Deep Dish Pizza

Can you believe there is a recipe for this?

INGREDIENTS:

For the Dough:

3¼ cups all-purpose flour

½ cup yellow cornmeal

1½ teaspoons salt

2 teaspoons sugar

2¼ teaspoons instant yeast

1¼ cups water, room temperature

3 tablespoons unsalted butter, melted

4 tablespoons unsalted butter, softened

1 teaspoon + 4 tablespoons olive oil, divided

For the Sauce

2 tablespoons unsalted butter

¼ cup grated onion

¼ teaspoon dried oregano

½ teaspoon salt

2 garlic cloves, minced

1 (28-ounce) can crushed tomatoes

¼ teaspoon sugar

2 tablespoons coarsely chopped fresh basil

1 tablespoon olive oil

Freshly ground black pepper

For the Toppings:

1 pound mozzarella cheese, shredded (about 4 cups)

(Pepperoni)

¼ cup grated Parmesan cheese

DIRECTIONS:

Make the Dough: Whisk together the flour, cornmeal, salt, sugar, and yeast in a large bowl. Add water and melted butter and mix on low speed, using a dough hook, until fully combined, 1 to 2 minutes, scraping sides and bottom of bowl occasionally.

Increase speed to medium and knead until the dough is glossy and smooth and pulls away from sides of the bowl, 4 to 5 minutes. (You can easily make this by hand, mixing in the water and butter with a spatula and then kneading by hand.) Coat a large bowl with 1 teaspoon olive oil.

Using a greased spatula, transfer the dough to the bowl, turning to coat the dough in oil; cover tightly with plastic wrap. Let rise at room temperature until nearly doubled in volume, 45 to 60 minutes.

Make the Sauce:

While dough rises, heat the butter in a medium saucepan over medium heat until melted. Add onion, oregano, and salt; cook, stirring occasionally until liquid has evaporated and onion is golden brown, about 5 minutes.

Add garlic and cook until fragrant, about 30 seconds. Stir in tomatoes and sugar, increase heat to high, and bring to a simmer.

Lower heat to medium-low and simmer until reduced to about 2½ cups, 25 to 30 minutes.

Off the heat, stir in the basil and olive oil, then season with salt and pepper. Laminate the Dough: Turn the dough out onto dry work surface and roll into a 15×12-inch rectangle.

Using an offset spatula, spread the softened butter over the surface of the dough, leaving a ½-inch border along the edges. Starting at the short end, roll the dough into a tight cylinder.

With seam side down, flatten the cylinder into an 18×4-inch rectangle.

Cut the rectangle in half crosswise. Working with one half, fold into thirds like a business letter; pinch seams together to form a ball. Repeat with the remaining half.

Return balls to the oiled bowl, cover tightly with plastic wrap and let rise in refrigerator until nearly doubled in volume, 40 to 50 minutes.

Meanwhile, adjust oven rack to lower position and preheat oven to 425 degrees F.

Bake the Pizzas: Coat two 9-inch round cake pans with 2 tablespoons of olive oil each.

Transfer 1 dough ball to dry work surface and roll out into a 13-inch circle. Transfer dough to the pan by rolling the dough loosely around a rolling pin and unrolling into the pan.

Lightly press dough into the pan, working into corners and 1-inch upsides.

If dough resists stretching, let it relax for 5 minutes before trying again.

Repeat with remaining dough ball. For each pizza, sprinkle 2 cups mozzarella evenly over the surface of the dough. (If you’re using any meat or veggie toppings, add them now, on top of the cheese.)

Spread 1¼ cups tomato sauce over the cheese (or toppings) and sprinkle 2 tablespoons Parmesan over the sauce.

Bake until crust is golden brown, 20 to 30 minutes.

Remove pizza from the oven and let rest 10 minutes before slicing and serving.

ENJOY!

1 teaspoon smoked paprika

1 tablespoon cajun/creole spice mix

1 teaspoon brown sugar

1 – 2 cloves garlic, finely chopped (1 large or 2 small)

½ cup crushed tomatoes

1 teaspoon Worcestershire sauce

¾ cup heavy cream, or ½ & ½ (I prefer heavy cream!!)

Kosher salt and fresh cracked black pepper

Grated Parmesan and chopped parsley, for serving.

DIRECTIONS:

Bring large pot of water to boil for pasta.

Toss shrimp with 1 – 2 tablespoons of cajun seasoning and coat well.

Heat a large skillet over medium high heat and drizzle bottom of pan with olive oil.

Add shrimp and cook for 2 minutes or so until starting to curl.

Flip shrimp over and cook another minute or two and then remove to a plate and set aside.

Drizzle pan with a little more olive oil, add sausage and brown until nicely caramelized, about 4 – 5 minutes.

Remove to plate, set aside. Add pasta to salted boiling water and cook until al dente, a minute less than package instructions.

Lower heat to medium and add another good drizzle of olive oil to the pan, add the onion, red bell pepper, thyme, smoked paprika, 1 tablespoon cajun seasoning, brown sugar and a generous pinch of salt.

Sauté until onion and pepper have softened a bit, scraping up any browned bits that you can. Add the garlic and cook until fragrant, about 30 seconds. Add crushed tomatoes, chicken broth and Worcestershire sauce and bring to a simmer, stirring and scraping up any brown bits from bottom of pan, simmer a couple minutes.

Add cream and stir to combine, bring to a simmer. Once simmering, add cooked pasta and andouille sausage and stir to combine and heat through, 2 – 3 minutes.

Add more chicken broth or cream if it seems dry or you’d like more sauce (I added ¼ cup of each).

Salt and pepper to taste and then lastly, add blackened shrimp and combine, or place shrimp on top of pasta.

Sprinkle with some more freshly cracked black pepper, grated Parmesan and chopped parsley.

Butter Rum Pecan Pound Cake

Another Sweet Treat for the people!

INGREDIENTS:

 2 sticks salted butter soften

 ½ cup canola oil

3 cups of white sugar

6 eggs large eggs

3 ½ cups sifted cake flour

1 tsp baking powder

 ¼ tsp salt

1 tsp butter extract

1 tbsp rum extract

1 cup of half and half (For best results all ingredients room temperature)

DIRECTIONS:

Blend sugar, butter and oil with mixer about 15-20 minutes, scraping bowl several times until sugar is dissolved and mixture is light and fluffy.

Add eggs one at a time making sure well blended, add rum and butter extract. Gradually add flour, baking powder and salt (I start with a cup and a half, of flour, mix well, then another cup, mix well, and then last cup).

Gradually add half and half about ¼ cup at a time blending well and scraping bowl about half way through.

Pour into a grease tub or Bundt baking pan. Place in a cold oven, set temperature to 300 degree, and timer for 1 hour 30 minutes. Depending on what type of oven it may take 1 hour 45 or a little longer so do check by inserting a tooth pick, (I use shish kabob straws because they are longer), if clean when removed, remove from oven and cool on wire rack for about 20 minutes.

Gently remove from pan and cool for additional 30 minutes. Glaze 2-3 cups confectioners sugar Bacardi White Rum Sift sugar or loosen with a wire whip in a bowl.

Gradually add rum until you have a very thick glaze (sorry I don’t measure, but I start with about 2 cups of sugar).

Using a soup spoon carefully glaze from the outer edge to the center, if your glaze run down too quickly, mix in more confectioners sugar to thicken.

Lightly or heavy the choice is yours.

Be creative, place Pecans halves on top before glazing or pecan pieces on top after glazing or if you’re southern both.

Note: Salted butter will keep several days on counter top so you’re always ready to bake.

If you forget to take eggs out put in a bowl and run warm water over to take the chill off.

Swann Down cake flour is my first choice of baking flour.

Half and half can be warmed in the microwave to take the chill off.

Use this receipt and change the extract favor and make wonderful lemon, vanilla, orange or whatever flavor pound cake you like.

Glaze for these cakes use water or milk and same extract you flavored the cake with, 1 tsp.

Yummy!

ENJOY!

Food Safety Tips
Protect yourself against food-borne illnesses.

1. Use a "refrigerator thermometer" to keep your food stored at a safe temperature (below 40 degrees fahrenheit).

Cold temperatures slow the growth of bacteria. Ensuring that your refrigerator temperature stays at 40 degrees Fahrenheit or colder is one of the most effective ways to reduce your risk of food-borne illness. You can buy a refrigerator/freezer thermometer at appliance stories, home centers (i.e. Home Depot), and kitchen stores including online ones, such as Cooking.com.

2. Defrost food in the refrigerator, the microwave, or in cold water... never on the counter!

Perishable foods should never be thawed on the counter for longer than two hours because, while the center of the food may remain frozen, the outer surface may enter the Danger Zone, the range of temperatures between 40 and 140 degrees fahrenheit, in which bacteria multiply rapidly. If you’re short on time, use the microwave or you can thaw meat and poultry in airtight packaging in cold water. Change the water every half-hour so it stays cold and use the thawed food immediately.

3. Always use separate cutting boards for raw meat/poultry/fish and cooked foods/fresh produce.

Bacteria from uncooked meat, poultry, and fish can contaminate cooked foods and fresh produce. An important way to reduce this risk is to use separate cutting boards for raw meat/poultry/ fish, and cooked foods/fresh produce.

4. Always cook meat to proper temperatures, using a calibrated instant-read thermometer to make sure.

One effective way to prevent illness is to use a food thermometer to check the internal temperature of meat, poultry, and egg dishes. The USDA Recommended Safe Minimum Internal Temperatures are as follows:

* Beef, veal, and lamb (steaks and roasts), fish - 145 degrees fahrenheit

* Pork and ground beef - 160 degrees fahrenheit

* Poultry - 165 degrees fahrenheit.

Cook meats like roasts and steaks to lower temperatures, closer to medium-rare, so that they retain their moisture. It is recommended that those who are at high risk for developing food-borne illness (i.e. pregnant women and their unborn babies, newborns, young children, older adults, people with weakened immune systems, or certain chronic illnesses) should follow the USDA guidelines.

5. Avoid unpasteurized/raw milk and cheeses made from unpasteurized milk that are aged less than 60 days.

Raw milk is milk from cows, sheep, or goats that has not been pasteurized (heated to a very high temperature for a specific length of time) to kill harmful bacteria that may be present. These bacteria, which include salmonella, E. coli and listeria, can cause serious illness and sometimes even death. The bacteria in raw milk can be especially dangerous to pregnant women, children, the elderly, and people with weakened immune systems or chronic illnesses. Raw milk cheeses aged 60 days or longer are okay, since the salt and acidity of the cheese-making process make for a hostile environment to pathogens.

6. Never eat "runny" eggs or foods, such as cookie dough, that contain raw eggs.

Even eggs that have clean, intact shells may be contaminated with salmonella, so it’s important to cook eggs thoroughly until both the yolk and the white are firm. Casseroles and other dishes containing eggs should be cooked to 160 degrees fahrenheit and you can use an instant-read food thermometer to check. Eggs should always be cooked fully and those who are at high risk for developing foodborne illness (pregnant women and their unborn babies, newborns, young children, older adults, and people with weakened immune systems or certain chronic illnesses should follow the USDA guidelines. If you can’t resist runny eggs or sampling cookie batter, use pasteurized eggs. They’re found near other eggs in large supermarkets.

7. Always wash your hands in warm soapy water for at least 20 seconds before handling food and after touching raw meat, poultry, or eggs.

You can pick up a lot of bacteria out in the world, so it’s important to always wash your hands before you eat or prepare food. You should also wash your hands after touching any uncooked meat, poultry, fish, or eggs, as the bacteria from these foods can contaminate cooked foods and fresh produce. Use soap and warm water and wash thoroughly for at least 20 seconds.

8. Always heat leftover foods to 165 degrees fahrenheit.

The USDA recommends heating all cooked leftovers to 165 degrees fahrenheit in order to kill all potentially dangerous bacteria.

9. Never eat meat, poultry, eggs, or sliced fresh fruits and vegetables that have been left out for more than two hours or more than one hour in temperatures hotter than 90 degrees Fahrenheit.

If you leave perishable foods out of the refrigerator or freezer for more than two hours they may enter the Danger Zone—the unsafe temperatures between 40 and 140 degrees Fahrenheit, in which bacteria multiply rapidly.

10. Whenever there’s a food recall, check products stored at home to make sure they are safe.

You should discard any food that’s been recalled because it’s associated with the outbreak of a food-borne illness. But, according to a survey conducted by Rutgers University during the fall of 2008, only about 60% of Americans search their homes for foods that have been recalled because of contamination. For more information on food recalls, visit the website Recalls.gov
