
It's the last day of summer....Seems like it came and went way too fast...... Anyway here is something called "Mango Salsa " that you should enjoy on this last day of Summer.
Ingredients:
1 ripe mango, peeled, pitted, and diced (about 1 1/2 cup)
1 medium red onion, finely chopped
1 JalapeƱo chile, minced (include ribs and seeds for a hotter taste if desired)
1 small cucumber, peeled and diced (about 1 cup)
3 Tbsp fresh cilantro leaves, chopped
3 Tbsp fresh lime juice
Salt and pepper to taste.
Also good with diced red bell pepper and jicama.
Directions:
Combine all of the ingredients in a bowl. Season to taste with salt and pepper. If the salsa ends up being a little too hot or acidic for your taste, you can temper it by adding some diced avocado.
Terrific recipe, Keith. This is my granddaughter's favorite salsa. We use bell peppers instead of cucumbers. The peppers add a different kind of crunch. Also, I rinse the onion under cold running water to knock some of that "bite" off. Oli loves it. It's too late in the year to find mangoes in my neighborhood but if I could find just one, i'd make this salsa today! I'm fighting an end of the summer cold and all that Vitamin C would help. Also onions help reduce fever and imflammation.
