INGREDIENTS:
12 ounces (340g) rigatoni pasta
1 tablespoon olive oil
1 pound (450g) Italian sausage, casings removed
1 onion, chopped
3 cloves garlic, minced
1 can (28 ounces) crushed tomatoes
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
1/4 teaspoon red pepper flakes (optional)
Fresh basil leaves, chopped,
for garnish
Grated Parmesan cheese, for serving
DIRECTIONS:
Cook the rigatoni pasta according to the package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat.
Add the Italian sausage to the skillet, breaking it up with a spoon, and cook until browned and cooked through.
Add the chopped onion and minced garlic to the skillet with the sausage. Cook, stirring occasionally, until the onion is soft and translucent.
Stir in the crushed tomatoes, dried oregano, dried basil, salt, pepper, and red pepper flakes (if using)
. Bring the mixture to a simmer and let it cook for 10-15 minutes to allow the flavors to meld together.
Add the cooked rigatoni pasta to the skillet with the sausage and sauce. Toss everything together until the pasta is well coated in the sauce.
Remove the skillet from the heat and garnish the Sausage Rigatoni with chopped fresh basil leaves.
Serve the pasta hot, with grated Parmesan cheese sprinkled on top, if desired.
