This is my granddaughter&...Terrific recipe, Keith. This is my granddaughter's favorite salsa. We use bell peppers instead of cucumbers. The peppers add a different kind of crunch. Also, I rinse the onion under cold running water to knock some of that "bite" off. Oli loves it. It's too late in the year to find mangoes in my neighborhood but if I could find just one, i'd make this salsa today! I'm fighting an end of the summer cold and all that Vitamin C would help.
